The full Pancake stretch is a very advanced flexibility/mobility skill that takes deliberate practice and consistency in order to achieve it safely. There are many ways to get the pancake, but this is a routine that is guaranteed to get you there if you put in the time and effort. As I mentioned on the video 2x or 3x per week is going to be more than enough. Even if we are working on flexibility, your body still needs time to adapt and recover from your stretching routine.
